Spring arrivals feature green asparagus paired with a poached egg, delicate mousseline sauce, and foraged morels. The autumn menu shifts toward heavier proteins, presenting a succulent leg of lamb alongside fried polenta, glazed carrots, and fresh rosemary. Nathalie manages the dining floor, greeting guests with a calm presence that matches the building’s original timber framework. The interior preserves warm finishes while introducing a modern swimming pool and sauna area for overnight visitors.
