DEBRA Gent moved into its current Zuidstationstraat location on July first, bringing chef Jason Blanckaert and Gilles Bogaert along to helm a fresh Flemish terroir kitchen. The approach to terroir cuisine strips away excess so premium ingredients carry the conversation. That dedication to clear flavors recently secured a 14.5 rating from Gault&Millau. Guests navigate a fully à la carte menu without being tied to fixed courses.

Signature Dishes and Seasonal Plates

Starters often highlight delicate textures, such as a langoustine toast paired with sour cream or an oyster dish dressed with spicy buttermilk. Main plates shift with daily catch and harvest, featuring a whole monkfish baked in a salt crust alongside beef heart beurre blanc. A pigeon preparation called Anjou arrives with three distinct cooking methods to showcase the meat. Seasonal terroir plates like violet artichoke or smoked hay butter cauliflower round out the savory offerings.

The dining room divides into three distinct zones to suit different group sizes. Patrons choose between the lively counter, the central front tables, or a quieter area toward the rear.
