The story
Mara delivers a focused Scottish kitchen in Dornoch, housed within the restored Links House manse. The dining room opened in 2021 after owner Todd Warnock completed a major renovation of the historic 1843 building. Here, Scottish cuisine follows a strict seasonal rhythm shaped by coastal winds and nearby moorland. The brigade treats the immediate landscape as the primary supplier rather than relying on distant distributors.
A dedicated vegetable plot sits just steps from the dining terrace, supplying finishing herbs that define the flavour profile. The beds yield parsley, sage, rosemary, thyme, tarragon, chervil, dill, bronze fennel, violets, calendula, borage, mint, and the locally developed Black Isle Blush chive. Bees pollinate the borders alongside scabious and lavender hedging planted for local biodiversity. This proximity allows the kitchen to operate under the 4S+0 philosophy, prioritising Scottish cuisine, seasonal sourcing, sustainable practices, and slow production while minimising waste.
Guests gather in spaces decorated with rich tartans, curated artwork, and period antiques before moving to the main dining floor. Fireside seating remains available in the library during cooler months, while the adjacent Anteroom hosts intimate chef’s table gatherings for up to twelve visitors. The beverage programme mirrors the food strategy by stocking exclusively Highland pourable spirits and whiskies. Wine selections focus on precise pairing with each course, and staff readily assemble custom drinks flights to complement the full meal. These consistent standards earned Mara two AA Rosettes for culinary excellence.
