The story
The Tilbury in Datchworth has built a reputation for Modern British cooking since opening in 2014. Brothers Tom and James Bainbridge combined thirty years of industry experience to establish the Hertfordshire location. Tom now directs the kitchen as executive chef, while assistant restaurant manager Molly Hemmings guides the front-of-house team. Their staff delivers calm, knowledgeable service without leaning on formal pretension.
The kitchen applies a seasonal methodology to both familiar pub staples and elevated dinner plates. Tom procures beef and lamb from Aubrey Allen Butchers, a royal appointed purveyor capable of tailoring specific cuts. Cornish dayboat seafood arrives fresh through Flying Fish, while regional dairy flows directly from Buntingford’s The Cheese Plate. These supply chain relationships dictate a rotating menu built around peak freshness.
The dining area maintains a relaxed atmosphere that extends onto a spacious terrace when temperatures rise. Warm weather transforms the grounds into a tipi bar venue hosting acoustic sets and casual grill fare. James collaborates with Hertford-based Wine2Trade to maintain the nationally recognized wine selection. The venue earned an AA Notable Wine List Award for these careful varietal pairings, reinforcing a steady commitment to accessible excellence.
