Hand rolled cavaletti pasta appears tossed with blackened heritage beans, wild garlic and shaved cheddar. Grilled sardines arrive charred over a slow roasted tomato compote finished with bronze fennel and spring onions. The team also transforms surplus croissants into chocolate butter for thin crêpes paired with spiced apricots. These preparations define the estate cuisine while keeping flavours grounded in the immediate harvest.
Diners choose between a relaxed indoor space and shaded tables positioned near the vegetable beds during warmer months. Forge operates on a tighter schedule with Thursday through Sunday evening service plus Saturday lunches. That focused pacing supports the six course and ten course tasting menus which recently earned a Michelin star and green accolade.
