The story
Perched above Chesterfield, the Red Lion Restaurant serves Modern British cuisine rooted in centuries of hospitality. The Georgian building began as a working farmstead in seventeen eighty eight before becoming a village inn in eighteen forty three. Historical archives note that nineteenth century cooks already promised to prepare any rare dish given twenty four hours notice, a standard the current team continues to respect. Santiago Perez restored the property, passing the vision to his son Steve, who bought it back in twenty seventeen.
Local suppliers provide the foundation for every Modern British preparation, allowing the team to adjust menus according to what the Derbyshire countryside yields. Chefs prioritize cutting board techniques over heavy sauces, letting natural flavours from nearby farms carry each course forward. Guests frequently order roasted game during autumn months, while summer tables feature lighter preparations built around fresh herbs and vegetables. A dedicated Farm to Table philosophy ensures that ingredients travel minimal distances before reaching the serving counter.
Cosy corners and working log fires define the dining space, which overlooks rolling moorland. Large windows frame the Peak District National Park, while polished wooden floors and upholstered seating keep conversations comfortable. This dedication to precise Modern British cooking has recently earned two AA rosettes for culinary excellence. Adrian Tinis manages the beverage programme, using a temperature controlled Sorrells cellar to stage monthly Wine Series events across Italy and Greece.
