Merry brings its neo-gastronomic cuisine to the heart of Liège, built on a foundation of shared culinary training. The founders met at a hotel school in Namur before refining their techniques across Michelin starred kitchens in Belgium and Paris. A three-year expedition through Oceania and Southeast Asia later shaped their approach to seasoning and preservation. They returned to Liège during a pandemic pause to ground their seasonal cuisine in direct partnerships with local growers.
Each course relies on controlled fermentation and careful texture mapping rather than heavy sauces. A line-caught fish tartare matures alongside fig leaves and barbecued cherries to build layered acidity. Beans arrive with a burnt zucchini base and a hay emulsion that cuts through the Lao Gan Ma hazelnut paste. Beef from Ardennes farms rests on pearl barley risotto with bay leaf sweet cream and charred eggplant.
