The story
Restaurant Traube sits in Blansingen, crafting a strictly regional German cuisine that draws heavily from the Markgräflerland terroir. Founders Brian Wawryk and Daniela built their craft across stages at Maaemo in Oslo and La Vie in Osnabrück before returning to their Canadian roots under chef Rod Butters. They treat hospitality as an artistic practice rather than a commercial pursuit. Every dish emerges from a rigorous commitment to local agriculture and vineyards, refusing imports to preserve centuries old farming traditions.
The six course tasting menu shifts daily alongside weather patterns and market availability. Brian structures each plate around earth, air, water, or fire, using those concepts to guide technique. Earth grounds the meal in local soil and cultivated roots. Air brings deliberate simplicity to delicate preparations. Water contributes fragrant freshness while fire introduces smoke and wild character through careful grilling. Smaller intermezzios appear between the main courses to keep the pacing fluid.
The dining room occupies a stately village building where natural stone walls meet exposed timber beams. Nine private guest rooms extend the property beyond a single evening of dining. The Schlemmer Atlas awarded three and a half ladles to this approach, praising the seamless blend of historic architecture and modern Markgräflerland cuisine. Guests can settle into one of the intimate chambers after a long service, carrying the quiet comfort of the countryside into their rest.
