On the shores of Lake Lucerne, in the quiet village of Hergiswil, Seebistro Belvédère offers a dining experience that is both refined and deeply rooted in its surroundings. The restaurant, run by hosts Fabian Inderbitzin and Yvonne Chappuis, has earned a Michelin star and 17 points from Gault Millau for its precise, terroir-driven cooking.

The kitchen’s philosophy is summed up in the phrase Haute Cuisine du Terroir – a modern French and international approach that draws on local ingredients and pays close attention to seasonality. The setting is integral: floor-to-ceiling windows frame the lake and mountains, while the outdoor terrace lets guests dine in the midst of nature. Inside, the atmosphere is calm and elegant, with service that feels personal and unhurried.

Belvedere" – the name fits perfectly with the spectacular view over Lake Lucerne. It also complements the beautifully arranged plates that Chef Fabian Inderbitzin serves in his evening menu (meat or vegetarian). Coming straight from the oven is the house’s first classic—a spelt brioche with brown butter. Next, the chef launches into an amuse-bouche fireworks display, with this time the mousse of Schwyz smoked trout paired with its caviar standing out even more. The poached organic country egg was excellent, elegantly accompanied by braised radish, a spicy dashi essence, and a sushi rice meringue. Matching the panorama visible through the large windows was the fillet of Alpine whitefish, served with beurre blanc alongside crisp peas and confit tomatoes. An equally successful combination graced the main course: the beef duo consisting of a cut of entrecôte with black pepper jus, mushroom terrine, and broccolini, alongside a fried pulled-beef praline. The chef maintained his impressive standard right through to the end with a caramel flan featuring strawberry essence, rose petals, and salted lemon. Flawless service under the hostess and chef’s partner, Yvonne Chappuis, an excellent wine list, a spacious terrace directly on the water, and an attractive business lunch at midday complete the experience.
