The story
At Brücke Hooksiel, guests encounter North German cuisine served directly beside the historic lock in Hooksiel. The building originated as a repurposed office block relocated by the Huntemann shipping line in 1999. Builders attached an actual trawler bridge to the facade, which inspired the restaurant name and its maritime identity. Jens Hanneken guided the kitchen for over twenty years before passing operations to his son Dennis and partner Ina in early 2025. Head chef Mike now maintains the traditional smoking routine alongside the management team.
Freshly caught flatfish remains a central pillar of the menu. The kitchen applies traditional smoking techniques inside the historic chambers to develop deep flavor profiles. Diners frequently order the sole prepared Finkenwerder style, a regional preparation that highlights delicate textures without heavy sauces. The Schlemmer Atlas awarded a single ladle for 2026, recognizing this steady execution of coastal cuisine.
A recent interior refresh updated the layout while preserving the original nautical bones. Large windows frame continuous views of the harbor traffic and waterway. The outdoor terrace extends the dining space toward the sunsets over the Jade Bight. Wooden tables and uncluttered seating arrangements encourage lingering conversations throughout the season.
