The story

The current Mediterranean kitchen balances familiar comfort with precise methods like sous vide and slow braising. Chefs prepare the Schwerstedter Strauss beef tenderloin at low temperatures to retain moisture, while oxtails simmer in Burgundy wine alongside traditional Thüringer Klöße.
