The story
Uwe & Uli brings French cuisine to the historic market square of Usingen, anchored by chef Uwe Weber and business partner Ulrich Spranger. Weber draws on years of high-end gastronomy experience to blend local ingredients with globally inspired spices. Spranger guides the front of house with a focus on creative hospitality, ensuring every visit feels personal rather than scripted.
The menu shifts between a light two-course midday service and an evening tasting journey paired with a dedicated steak selection. Guests can also encounter aged cheeses from Bernard Antony, the renowned Elsass affineur, which highlights the kitchen’s dedication to French cooking traditions. This careful balance of terroir and technique earned the venue two and a half cooking spoons from the Schlemmer Atlas for 2026.
The dining room occupies a timber-framed structure that has stood at the market square for over three hundred years. Evenings frequently host an immersive three-dimensional culinary projection that turns the meal into a shared visual narrative. Weber’s daily routine centers on reviewing the pass and adjusting plates until they meet his standards. Guests who appreciate unhurried service find a steady rhythm here.
