Located on Ypres’ Grote Markt, Klei delivers a contemporary cuisine grounded in the rhythms of the surrounding region. Chef Jonathan Devogel treats the pass as a laboratory where acidity and controlled heat meet meticulous execution. The evening menu centres on the called K Collection, where precise temperature control defines the main courses. Lamb neck cooked at exactly 57 degrees arrives alongside paloise sauce, fresh tomato and mint. Raw preparations like veal tartare get lifted by langoustine, sakura blossoms and gooseberry, while grilled duck follows with blackberry and lemon geranium. Lunch service shifts the focus to quick heat, offering horse mackerel paired with rhubarb and hijiki, or a portobello topped beef sirloin finished with bell pepper.
Service begins at the entrance where host Carl Couvreur manages the flow between dining room and kitchen. The space accommodates standard seating before guests reach the ground floor, though a dedicated private room holds twelve diners for quieter gatherings. Large windows overlook the market square, allowing natural light to fill the room during afternoon service.
