The story
Pinzgauer Stub’n in Mannheim has served Austrian cuisine for more than twenty-seven years. Sabine and Helmut Rohregger run the kitchen, balancing grounded classics with lighter modern interpretations. They source regional produce and adapt recipes to suit different tastes without losing their traditional roots. A one and a half ladle rating from the Schlemmer Atlas confirms how well this approach translates onto the plate.
The Austrian cooking here leans heavily on established Central European preparations. House-made potato salad accompanies the veal Wiener Schnitzel, while baked Icelandic cod appears with remoulade. Heavier plates like Zwiebelrostbraten or hummer Schlutzkrapfen offer richer alternatives, all finished with sharp horseradish or Styrian pumpkin seed oil. Desserts rely on seasonal fruit preserves, particularly the Kaiserschmarrn served with plum compote.
Wood paneling covers the walls, grounding the dining room in a straightforward layout. Guests pair their meals with selected bottles from Austrian winemakers, which complements the rich sauces and roasted meats. A separate hall accommodates larger parties, though the main floor remains the preferred spot for regular visitors. Dogs are permitted beneath the tables, keeping the tone informal and welcoming.
