The story
Hugo im Dahl in Ascheberg builds its reputation on dedicated trout cuisine that traces back to 1955. Gabriele Ledendecker took over the family operation in 1998 and expanded the concept into a modern trout-focused kitchen. The culinary team maintains its original philosophy by raising fish in crystal clear spring water ponds located directly beside the building. This direct supply chain eliminates long transport routes and ensures every plate arrives with minimal delay.
The menu stays deliberately narrow to highlight precise techniques in trout cooking, starting with the classic Müllerin and blau preparations. Guests can also order clear tomato soup finished with serrano ham or a tower of grated potato cakes paired with matjes. Seasonal produce appears alongside the fish, such as pan-fried peaches served with burrata or roasted chanterelles wrapped around cured goat cheese. Diners enter through a bright main hall that seats 25 guests before reaching the intimate fireplace room for six.
