A Home in Hamburg’s Oldest House

Whiskyplaza occupies a 1697 burgher house on Deichstraße, a building that survived the Great Fire of 1842 and the bombings of 1943. After a meticulous renovation in 2021, the bar – founded in 2007 – found its permanent home here. The result is a space that feels both historic and alive, with a tasting room upstairs that evokes old-British comfort.

The Kitchen: Regional, Seasonal, Responsible

Chef Sebastian Stobinski leads a kitchen that takes its sourcing seriously. Vegetables come from small farms around Hamburg, meat from pasture-raised animals in the Elbtalaue region, and wild game from the nearby Jadghaus Dellien during hunting season. Fish is sustainably caught or hand-dived, and the team works with small Hamburg purveyors whenever possible. The menu changes with the seasons, offering dishes like a North Sea bouillabaisse with local fish and mussels, or a Sunday roast. The commitment is clear: no shortcuts, no industrial suppliers.

More Than a Whisky Bar

Yes, the name gives it away. The bar keeps over 1,100 open whiskies – from rare closed distilleries like Brora and Port Ellen to a Linkwood from 1939. They organize tastings, and every dram comes with water and a piece of sea salt chocolate. But the cocktail list is equally considered: classic recipes, signature drinks, and a few whisk(e)y-based cocktails. The Michelin guide recognized this commitment to quality, awarding the bar a Recommended status in 2026.

Private Dining and Tastings

Upstairs, the private dining room doubles as a tasting room. Guests can work with Chef Stobinski to create a custom menu, subject only to the house rules on meat and fish sourcing. It’s an intimate setting for a focused evening.

Whiskyplaza is a place of conviction – in its ingredients, its spirits, and its atmosphere. It’s a bar that happens to serve excellent food, or a restaurant that happens to have an extraordinary whisky selection. Either way, it’s worth the trip to Hamburg’s historic centre.
