The story
Ulf Lindeholz and Wiebke Basse have guided Restaurant Kaalia since 2014. Their motto, "We cook what we enjoy," shapes a kitchen that favors personal flair over rigid tradition. The setup is intimate, with an open kitchen serving just five tables for a maximum of ten guests. This constraint allows the hosts to focus intensely on every plate, ensuring a relaxed dinner experience where the boundary between service and preparation remains blurred.
The menu reflects a thoughtful mix of French and Indian cooking, built around seasonal produce from local partners like Metzgerei Dreymann and Sebastian Baier Fish Butchery. A recent dinner menu featured Bressehuhn paired with paprika and jus, showcasing French culinary precision through high-quality cuts. Indian spice profiles ground vegetable plates, where aubergine meets shiso and sunflower kernels, while dirty rice carries paprika heat.
