The story
Chefs Warehouse Hamburg occupies the restored Maschinenzentralstation, a former hydraulic power plant completed in 1888 inside the UNESCO-listed Speicherstadt. The venue introduces Cape Town-inspired cuisine to Hamburg, rooted in the Cape Town-style menu developed by founder Liam Tomlin since 2014. Kitchen director Eric Kröber leads a team focused on precision and ingredient quality, crafting dishes that remain accessible yet demanding. Diners sit facing the open Canteen kitchen, observing the rhythm of service beneath the high ceilings of the revitalized industrial space.
The menu organizes meals around the Flora and Fauna sharing sets, inviting guests to combine vegetable and protein dishes across multiple plates. Starters like Kingfish Crudo with ponzu and grapefruit lead into mains such as Nordic Beef served with bone marrow and a charcuterie sauce. The kitchen also highlights vegetarian options, including Grilled Broccoli with buffalo mozzarella and pistachios, as well as Tandoori Cauliflower accompanied by coconut and fried curry leaves. A Seafood Curry adds spice notes through wild rice and Kashmiri chili. The Schlemmer Atlas awarded two ladles for this approach, highlighting the consistent execution in the visible kitchen.
A generous bar sits on an upper level, providing both secluded seating and an unobstructed perspective of the kitchen floor below. Adjacent to the dining area, The Warehouse shop displays functional art and culinary goods, including tableware from Mervyn Gers Ceramics and leather products from Looi Leather. Select items in this retail corner contribute to the Callas Foundation, supporting community initiatives in Cape Town. Long solid wood tables allow larger groups to gather, while the layout ensures the room remains welcoming and comfortable despite holding up to 170 covers. The design respects the heritage of the machine station while creating a relaxed environment for evening gatherings.
