The story
Duc Quynh Nguyen established Chay Vegan Hamburg after learning to prepare plant-based meals in his own family kitchen. This Asian kitchen swaps meat and dairy for firm tofu, soy milk, and market vegetables without losing traditional depth. Nguyen developed dozens of recipes over years before opening these doors, a practice that recently earned a 3.5 ladle recognition from the Schlemmer Atlas guide. Every plate follows his principle that eating healthy leads to lasting energy.
The dining room sits on a calm side street just off the busy Spitalerstraße pedestrian zone. Guests step away from the city noise into a relaxed space designed for unhurried meals. The layout remains straightforward, letting the food take center stage rather than competing with heavy decor. Fresh herbs and raw vegetable preparations arrive at the table alongside hot wok dishes throughout the service.
The menu features familiar Asian cooking techniques adapted entirely for vegan Asian cuisine. Guests frequently order the Green Roll, which wraps tofu and oyster mushrooms in grilled betel leaves, or the Golden Bowl, combining aubergine and sweet potatoes in a creamy coconut curry. Lighter options like summer rolls filled with mango, avocado, and hoisin peanut sauce balance heavier stir fries.
