The story
Delikat am Stadewäldchen in Dortmund has built its reputation on a modern international cuisine that respects seasonal boundaries. Over two decades of independent operation preceded the 2024 merger with the historic Stadewäldchen venue. The owners combined their previous Tapasbar TAPA experience with longstanding culinary traditions to create a unified menu. This flexible fusion kitchen draws heavily from Eastern European heritage while maintaining a strict commitment to seasoning without artificial additives.
Autumn brings a dedicated chanterelle program featuring roasted mushrooms alongside young potatoes and fresh herb garnishes. The menu balances these forest ingredients with reliable staples like original spaghetti carbonara prepared with guanciale and aged pecorino cheese. Guests frequently order slow braised black Angus cheeks glazed in red wine or traditional pelmeni filled with minced beef and pork. This adaptable fusion cuisine also highlights plant based preparations such as miso glazed eggplant served with soba noodles.
Wooden floorboards and deep sofas anchor the main dining area near a leafy park and an outdoor beer garden. The Schlemmer Atlas awarded the venue one copper ladle in 2026 for delivering fresh produce within this relaxed residential setting.
