The story
Descend a narrow staircase into the inner courtyard to find the brick arches of Weinkeller „Postmeister von Hinüber“ in Celle, a destination known for its seasonal fusion cuisine. The space preserves the footprint of an eighteenth century postal station where the Hinüber family once managed regional mail routes. Bare wooden tables sit beneath exposed masonry, creating a grounded setting that matches the restaurant’s award recognition from the Schlemmer Atlas.
Thomas Krafthöfer and Corinna Räker have guided the kitchen since 1996, building a menu that shifts with the harvest. Ingredients arrive fresh from local farms and French suppliers, shaping a distinctly Mediterranean cooking style that blends classic techniques with contemporary pairings. The preparation stays rooted in produce quality rather than heavy styling, letting simple methods speak clearly.
The current menu features crisp risotto cakes with garden vegetables, pan-seared dorade served over pesto fettuccine, and Landuro pork tenderloin braised with wild mushrooms. These Mediterranean influenced plates pair easily with the extensive selection of open reds, whites, and rosés poured directly from the cellar racks. The combination earned the venue its 1.5 ladle rating and continues to draw steady crowds.
