The story
Waldhotel Schinkenwirt in Olsberg anchors its Mediterranean inspired kitchen in the Sauerland highlands. Michael and Gabi Pfannes established their culinary approach here in 1998, prioritizing clean preparation and fair sourcing. Their pantry still relies on freshly gathered forest mushrooms and game delivered directly by local hunters. The couple transformed an original vegetable plot into a dedicated herb garden to supply the kitchen daily.
The evening menu shifts daily to match what arrives from the Revier Bremecke hunting grounds and neighboring farms. Guests frequently encounter braised Schmaltier shoulder paired with crisp red cabbage and hand rolled dumplings. A rindercarpaccio presentation highlights pickled chanterelles tossed in premium olive oil and shaved Grana Padano, introducing a gentle Mediterranean note to the rich game preparations. Each dish carries the quiet precision of a kitchen that refuses to rush.
The dining room sits at four hundred forty two meters elevation where pine forests frame every window. Natural light fills the space during lunch service while evening guests enjoy uninterrupted panoramas of the Sauerland ridge. The venue earned a one and a half spoon rating from the Schlemmer Atlas for its seasonal venison pâté and house smoked wild sausage. This measured environment allows every course to settle properly before the next arrives.
