Edelfrei Restaurant in Bamberg delivers a modern Mediterranean style rooted in southern cooking traditions. Mother Sonja and son Johannes Weigand opened the doors to fill a local gap, wanting a space where friends could share quality wine without committing to a formal dinner. That straightforward premise now guides a kitchen focused on relaxed service and precise technique, anchored by their long-term relationships with regional artisans.
The menu pairs regional Bavarian suppliers with carefully sourced imports like Felicetti noodles and Jamei cheeses. Diners frequently order octopus accompanied by topinambur and chimichurri, or wild garlic ravioli folded with pine nuts and burrata. Even plant-based plates follow this Mediterranean-inspired approach, blending carrot and pea bases with fermented miso and locally roasted coffee notes.
Schlemmer Atlas recognition and a recent Vinum German Wine List Award reflect the team’s serious commitment to viticulture.
