Architect Philipp Moeller completed the building’s renovation in 2022, establishing a space that respects the surrounding landscape while hosting daily operations. Maximilian Müller spent two years before opening cultivating relationships with local farmers and fisheries, ensuring every ingredient arrives with documented provenance. This deliberate groundwork shapes a menu that shifts weekly according to harvest windows and weather patterns.
The kitchen translates regional availability into refined plates without relying on heavy traditional preparations. Whitefish Matjes sourced directly from Chiemseefischerei Lex appears alongside crisp apples and potato rösti, while veal stew rests beside soft pretzel dumplings. Vegetarian options draw from cellar roots and dairy byproducts, such as a careful preparation combining celery, whey, and cornelian cherry.
