Chef Sandro D’Antonio relocated the kitchen to rue de Nimy to give his team more room while keeping the open layout visible to guests. This modern French cuisine builds its tasting routes around specific preparations that highlight seasonal sourcing. Grilled octopus arrives alongside a smooth fava bean cream, while wild sea bass is paired with artichokes, verjus, and capucine flowers. Roasted pigeon rests in a rich carcass jus finished with Kriek, and the dessert plate often features an apricot flambéed with Amaretto beside brioche and nougat ice cream.
