The story
At L’Espérance in De Haan, French-Belgian culinary tradition takes center stage in a deliberately small space. Bart and Katrien opened their doors in May 2025 after deciding to transform the location into an intimate dining room limited to eighteen covers. The open kitchen lets guests watch the preparation unfold while Katrien manages the floor with steady hospitality. This hands-on approach earned a 12.5 rating from Gault&Millau, which praised the careful handling of seasonal ingredients and the distinctly personal plating style.
The kitchen rotates its offerings every two to three weeks so the selection always reflects what local suppliers provide at that moment. Current highlights include a West Flemish beef tartare dressed with courgette, tomato, and toasted pine nuts. The seafood rotation features pan-seared scallops paired with cauliflower and a hint of vanilla, alongside line-caught cod served over fregola with green asparagus and white beech mushrooms. This French-Belgian approach prioritizes clean flavors and precise technique over heavy sauces.
The dining room contains exactly eighteen covered chairs arranged around a central passage that keeps foot traffic quiet. Soft lighting and wooden furnishings create a domestic atmosphere, while the open kitchen wall allows diners to watch Bart plate each course. Staff members track allergies and dietary preferences during booking to ensure seamless substitutions. Small companion dogs under five kilograms receive approval upon request, maintaining a consistently calm environment throughout the two-hour service.
