The story
At Da Mimmo in Brussels, chef Louis Verstrepen guides a refined Italian kitchen where technical precision meets aromatic exploration. He took over in 2023. His training under Joël Robuchon and Anne-Sophie Pic now shapes a menu honoring classic Italian foundations while introducing deliberate contemporary shifts. Gault&Millau validated this approach by naming the establishment Italian Restaurant of the Year in 2024 and assigning a score of fifteen out of twenty.
The dining room presents five, seven, or nine course degustation paths built around seasonal produce. A streamlined three or four course business lunch operates Tuesday through Friday, with vegetarian configurations prepared upon request. Wine bottles drawn primarily from regional estates anchor these meals, though select Belgian and international labels complete the list. Guests move through offerings labeled Degustazione, Sensoriale, and Fragranze to match their preferred depth of exploration.
The location has sheltered the same culinary concept for more than twenty-five years before Verstrepen stepped in. The interior preserves a sober, contemporary framework that directs full attention toward the plates rather than decorative elements. Returning patrons track the menu’s gradual evolution while first-time visitors settle into an uncluttered environment. The pacing remains steady throughout the evening, allowing the Italian cooking to carry the conversation.
