The philosophy places the ingredient front and center, evolving the menu every four weeks to reflect the freshest produce available.
Signature dishes highlight technical restraint and bold pairings, such as hamachi dry-aged alongside cucumber and wasabi, or langoustine prepared with flat bean and lemon verbena. This seasonal gastronomy favors precise execution, evident in monkfish served with mussel and vadouvan spice, or beef "Berugi" accompanied by eggplant and smoked onion. These preparations appear across the five- and six-course "Essence" menus, balancing delicate seafood with robust earthy notes.
