The story
At L'O de Source in Jalhay, chef Xavier Fisset and Karine Roche present a refined approach to gastronomic cuisine that honors regional ingredients.
The couple met while finishing their hospitality studies in Chambéry, France, before returning to the Ardennes to launch L'O de Source in July 2013. Xavier Fisset leads the kitchen. Critics describe his style as artisanal and authentic. His gastronomic cooking centers on showcasing local produce with precision. This approach earned a Gault&Millau score of 14 for the 2026 edition. The team also secured the Prix-Pleasure award for Wallonia in 2023.
The dining space occupies a former railway station at Sart-station, reimagined during a renovation completed in June 2020. Guests choose between two distinct areas. A bright room features a veranda opening onto the garden, while a second hall suits private gatherings. Outside, a terrace runs alongside preserved tracks. The final train departed here in 1969. Sober interior design keeps the focus on the quiet charm of the converted infrastructure.
The property includes five guest bedrooms for those wishing to stay near Spa. Some chambers sit within the historic station walls. Others offer a contemporary layout. Every room prioritizes comfort and character. This arrangement facilitates a seamless visit to the region.
