The story
LEELA brings an evolving Indian kitchen to Causeway Bay under the direction of Executive Chef Manav Tuli. His career spans eighteen years across Kerala, Rajasthan, and London, where he worked at Tamarind and later led the team that earned one MICHELIN star at Rosewood Hong Kong. The menu treats Indian cuisine as a continuous exploration rather than a fixed repertoire. Regional techniques shape every plate while respecting the historical rhythms of ancient empires.
The dining philosophy grounds itself in traceable ingredients and verified suppliers. Leela sources GMO free spices, lentils, and millets through Prime Organic while partnering with Farmhouse Productions, Hong Kong Aquaculture, and Wah Kee Farms for fresh vegetables, seafood, and pork. This supply chain reduces transport miles and keeps the seasonal produce at peak freshness. The resulting plates balance familiar spice blends with textures that highlight regional Indian cooking.
General Manager James Sandberg coordinates the floor service to match the kitchen’s deliberate pacing. Guests navigate a room designed around the Hindu concept of divine play, which frames the menu as a structured yet spontaneous journey. This consistent execution earned the venue a Black Pearl Restaurant Guide diamond recognition for 2026. The layout encourages unhurried conversation while the staff maintains clear sightlines to the pass.
