Bayview by Danny Khezzar presents French cuisine at Geneva's waterfront. Chef Danny Khezzar took over the kitchens in May 2023, building on seven years of excellence under his mentor, Meilleur Ouvrier de France Michel Roth. Khezzar, known for his technical precision and background on Top Chef, balances tradition with a modern edge. The kitchen prioritizes the local terroir, sourcing vegetables, grains, and lake fish marked with the "Genève Région - Terre Avenir" certification to ensure traceability and quality.
The French cooking here reveals itself through complex flavors and precise techniques. A standout starter features a bouillon of Genfer Seitlingen paired with white chocolate hidden inside, served alongside a tannenholz-smoked cream and macadamia nuts. The seafood courses offer distinct textures, such as spaghettos wrapped around an onsen egg with truffle and Stachys, accompanied by a caramelized brioche. Land proteins receive equal attention; the venison arrives under a glass cloche releasing smoke, served with pommes soufflées and an intense venison bonbon. Pastry duties fall to Sous-Chef Amanda Vanelle, whose creations include a pear variation and a deconstructed lemon meringue cake.
