The story
Piment & Chocolat serves refined seasonal cuisine in Sombreffe, a project launched by chef François-Xavier Paris in 2019. Working alongside Florence Dehaye, he built a kitchen that treats raw ingredients with strict respect, earning a twelve out of twenty from Gault&Millau for balanced creative cuisine. Every plate begins with produce from regional farms like Ferme de la Chapelette. This direct supply chain keeps the cooking grounded and honest.
The menu shifts constantly as fresh market arrivals dictate what lands on the table. Current highlights include a ceviche of pollack cheek marinated in melon and raspberry, or a rose-cooked squab with a tempura thigh and olive jus. Guests frequently order the open ravioli featuring ray cheeks and mussels dressed with saffron vegetables. Even the weekday lunch service follows this same rigorous standard, offering chilled bao buns with mussels and curry alongside roasted pork shoulder.
The dining room carries the relaxed energy of a neighbourhood brasserie rather than a formal institution.
