A House in the Fields

Just off the E42, a brick-and-steel building sits alone among the fields of Saint-Georges-sur-Meuse. This is the setting for Restaurant Philippe Fauchet, where chef Philippe Fauchet and his wife welcome guests into a space that is contemporary, sober, and elegant.

The approach is direct: a clean-lined room, a private parking lot, and a terrace for warmer days. The kitchen follows the same philosophy—pure, inventive, and modern, rooted in the seasons. The result has earned Philippe Fauchet a Michelin star, a recognition of high-quality cooking that matches the precision shown in every plate.

The Menu as a Story of the Season

The current menu (May) reads like a conversation with the market. Lunch offers a three-course formula for 75 euros, built around market produce. The evening unfolds in four or five services, priced at 130 euros and 150 euros respectively.

A meal might begin with white asparagus, grey shrimps, and a X.O. yuzu sauce. Then John Dory with fava beans, grilled nuts, and a Vin Jaune mousseline. Lobster cooked over a wood fire appears on the five-service menu, paired with violet artichoke emulsion and crunchy spring-summer vegetables. Pigeonneau Royal d’Anjou comes with Granny Smith apple, confited Noirmoutier potatoes, and Banyuls.

Desserts revisit classics: Crêpes Suzette 2.0, vanilla crème brûlée, Grand Cru Congo chocolate Dame Blanche, or a strawberry Pavlova. All menus are adaptable to vegetarian diets.

A Curated Wine Cellar

The restaurant’s wine list, called "La Cave," is tight and intentional. Bottles like the Sobre from Vouette & Sorbée (280€), Domaine Richeaume’s Cuvée Tradition (90€), and a 2017 La Maison Jaune from Domaine Alquier (60€) show a focus on terroir-driven producers. It is a wine program built for those who drink slowly and with curiosity.
