The story
At La Villa in the Sky in Brussels, Chef Alexandre Dionisio leads a kitchen dedicated to modern classical cuisine. He approaches his daily service with steady rigor and a clear attention to detail. His recipes stay rooted in traditional techniques while leaving room for subtle contemporary touches. Simple, high-quality ingredients form the foundation, prepared so their natural character remains intact.
Rising more than one hundred metres above the city, the restaurant occupies a contemporary glass structure on the IT Tower roof. Visitors step into an open kitchen where the team transforms premium products into elegant compositions that define this French-inspired cuisine. Daytime tables frame a sweeping panorama of Brussels, while evening service shifts toward intimate lighting and starlit horizons. This elevated setting earned a solid 17 out of 20 from Gault&Millau, recognising both the ambition and the execution.
Guests navigate a carefully paced schedule across three distinct offerings. The midday service runs approximately two hours, featuring seasonal selections alongside a fixed three-course business lunch. Evening diners choose between a five-course Menu Louise or a seven-course Menu in the Sky, both designed to unfold over three full hours. Wine pairings complement each progression, while strict adherence to seasonal sourcing keeps this contemporary cooking firmly grounded in its surroundings.
