The story
At 65 Degrés in Brussels, fine cuisine meets a deliberate social mission. The establishment takes its title from the exact temperature that yields a perfectly cooked egg, a subtle nod to culinary precision. Founded in 2018 by four motivated co-founders, the project now operates under four volunteer partners who bring diverse expertise in both hospitality and professional integration. Eleven young adults with mild to moderate cognitive disabilities work daily across the floor and behind the pass, turning their potential into tangible skill.
The culinary program focuses on fine cuisine that prioritizes clarity over complexity. Chefs craft each plate with meticulous attention to ingredient balance, ensuring the flavors remain unmistakable. A Gault&Millau score of twelve and a half reflects this disciplined execution, rewarding consistency rather than theatrical presentation. Menu compositions shift with seasonal availability, keeping the offerings grounded in reliable sourcing.
Guests enter a warmly lit space designed to feel genuinely human rather than intimidating. Waiters and assistants operate with clear motivation, moving through service routines with practiced ease. The architectural backdrop remains unobtrusive, allowing the quiet confidence of the team to take center stage. Lunch runs Tuesday through Friday while evening service extends into Saturday, maintaining a steady rhythm throughout the week.
