The story
Tatar in Vienna introduces a Mediterranean-Japanese cuisine that treats food and drink as complementary languages. Chef Luca Termine directs this approach by balancing coastal ingredients with precise island techniques. The daytime service keeps the selection focused, allowing the kitchen to refine flavors without excess. Evening guests encounter a structured four or five course progression that traces the same geographic path.
The dining program divides cleanly between day and night operations. Midday covers remain narrow so the team maintains strict quality control over each plate. Guests arriving after six o'clock select from a guided four or five course sequence built around Mediterranean-Japanese cooking principles. Signature preparations include a chilled ajo blanco finished with a crisp herbal layer that preserves its original brightness.
The space was conceived by studio PAW! to support the restaurant’s dual focus on gastronomy and craft beverages. Glassware and table arrangements prioritize clarity, ensuring that cocktail presentation matches the precision of the kitchen. The beverage program runs parallel to the menu, drawing spirits and botanicals from both regions to complete the fusion kitchen narrative. Recognition from Gault&Millau reflects how consistently this balance executes during service, rewarding diners who appreciate measured pacing alongside inventive pairings.
