At Gyukatsu Rose in Orlando’s East End Market, the name says it all. This is a restaurant built around a single, precise dish: Japanese beef cutlet, breaded and fried to a golden crust, served with an interactive tabletop grill so each guest can finish every bite exactly as they like. It’s a focused, confident concept that earned Gyukatsu Rose a place in the MICHELIN Guide 2026.

Chef Sean “Sonny” Nguyen, whose portfolio includes the MICHELIN Bib Gourmand awardee Domu, the MICHELIN-recommended Edoboy Standing Sushi Bar, and Japanese izakaya Tori Tori, first tasted gyukatsu in 2017 during a trip to Japan. What began as a mistaken wait in line—he and his wife thought they were queuing for ramen—ended with a meal that stayed with him. He became determined to bring that experience to the United States.

Gyukatsu Rose, named after his youngest daughter Harlee Rose, uses a proprietary cut of wagyu from 100% Japanese Tajima cattle, crossbred to achieve a beef marble score (BMS) of 6–8. The result is a tenderness that rivals filet mignon, with rich, buttery marbling that defines every bite. The katsu is served with traditional sides: rice, suimono soup, and house-made dipping sauces. Guests then cook each piece on a personal grill at the table, controlling the doneness themselves.

The menu offers Single and Double Wagyu Sets, Tuna Sets, a Surf ‘N Turf Set, and Curry Menchi Katsu. On Saturdays, a Japanese Breakfast Set is available from 9:00am to 12:00pm. Sunday Brunch runs 11:00am to 2:00pm, and dinner service is Thursday through Sunday, 3:00pm to 10:00pm (kitchen closes at 9:30pm). Walk-ins are welcome, and reservations open 14 days in advance.

This is Japanese cuisine distilled to its essence: one dish, done with uncommon care, in a setting that invites you to take part in the cooking. Gyukatsu Rose brings a taste of Tokyo’s gyukatsu shops to Central Florida—and the MICHELIN Guide has taken notice.
