The kitchen philosophy

Frenchette in Oostende frames its approach to contemporary French cooking around a deliberate sharing model that moves away from individual portions. Leo Deklerck, Gerda Maenhout, and Luc Deklerck structured the dining format into two distinct paths: a three-course selection menu or an extended multi-course sharing experience. Friday and Saturday evenings operate exclusively on the sharing layout, placing dishes directly at the center of the table so guests pass bowls and plates freely. The team anchors each service with seasonal regional products while allowing global techniques to guide the broader menu architecture.

Seasonal plates and tasting notes

Current plates highlight veal tartare served with watermelon, feta, and toasted almonds, alongside sardines baked inside crisp pastry with caponata and aged balsamic. Mussels arrive dressed in yuzu and verbena next to kohlrabi, while catch of the day rests on green beans and piquillo peppers over fregola sarda. Pluma ibérica follows, accompanied by courgette, tomato, and rocket pest finished with pommes fondantes. The French-inspired kitchen closes the service with Morbier paired to nectarine and sourdough, then raspberry millefeuille with white chocolate and mojito sorbet.
