Chef Alex Boyd leads the kitchen following a thirty-year career spanning two Michelin-starred establishments with Pierre Koffmann and Joël Robuchon. At St Ermin's Hotel, he managed six outlets to achieve AA Four Red Star status, applying that standard here. Virginia Boyd brings hospitality rooted in her family's restaurants and hotels across Hong Kong and China. Their partnership merges technical rigour with genuine connection, supporting the kitchen's bold Asian flavours and exacting technique, reflected in their 2 AA Rosette award.
