The Chef and the Kitchen

Chef Mauro Colagreco directs the culinary programme with an emphasis on fresh ingredients and technical clarity. The kitchen recently hosted a four-hands collaboration with Raf’s, introducing bespoke lunch and dinner menus aligned with London Fashion Week. Earlier this year, the team partnered with BBC MasterChef semi-finalists to craft an Espionage Menu drawn directly from the building’s classified history. These rotating concepts demonstrate a commitment to narrative-driven tasting menus.

The kitchen secured two AA Rosettes for Culinary Excellence in 2026, recognizing consistent precision across multiple courses. That certification reflects a system built on rigorous ingredient sourcing and disciplined plating standards. The main salon balances formal architecture with comfortable seating arranged for extended meals, while staff move through the space with measured efficiency.
