Menus unfold across ten or thirteen steps, designed for conversation rather than solitary tasting. A typical opening sequence features Creuse oysters served alongside grilled bone marrow and fresh chives. The kitchen coordinates each bite with either a curated wine list or a non-alcoholic alternative, finishing service with roasted coffee and herbal tea. When the main venue closes for seasonal updates, the team transports their equipment to outdoor locations like the rooftop vegetable garden at Hof van Evert. Reservations reopen in October once the interior refresh reaches completion.
