The story
Wild Carrot in Fleet delivers a thoughtful interpretation of British contemporary cuisine through a seasonally driven kitchen. Executive Chef Talha Barkin built his culinary foundation in the lakeside town of Koycegiz, Turkey, where family recipes taught him to value ingredient origin above all else. That philosophy guides his daily operations across the Hampshire estate, where the calendar dictates what arrives on the pass. The kitchen secured two AA Rosette honors by focusing on precise technique and transparent sourcing rather than complex presentations.
The evening menu highlights regional partnerships and careful preparation. A spiced duck breast accompanies caramelized parsnip, apricot purée, and a concentrated port wine jus. Late summer seafood selections feature line-caught bass served with girolles, grapes, and coastal herbs finished in a vermouth sauce, showcasing how modern British cooking adapts traditional coastal flavors.
Guests eat in a relaxed environment that echoes the quiet history of Dogmersfield Park. The main floor welcomes individual diners while a dedicated room handles private events and group celebrations. Just beyond the dining area, the bar prepares craft cocktails centered on the county’s seasonal harvest. Local botanicals and classic spirits merge to create drinks that reflect the same regional focus found on the plates.
