The story
Head Chef Jamie Cann has guided the kitchen at The Timble Inn in Timble, North Yorkshire for twelve years. His classical French and Italian training informs his approach to Modern British cooking. He prioritises seasonal ingredients sourced from regional producers like R&J Yorkshire’s Finest Butchers and Hodgsons Fish. A pen beside his bed captures late-night recipe ideas, which he then refines into balanced plates that honour traditional techniques while introducing subtle contemporary twists.
The current menu features a roast loin of venison served with Jerusalem artichoke puree, a rich suet pudding, and pickled blackberries. Guests frequently order the pan-fried Fraserburgh halibut paired with kohlrabi fondant and samphire, though the duck breast with a confit spring roll remains a consistent favourite. Seasonal vegetable preparations shift regularly, highlighting local cheeses and root vegetables. This approach to Yorkshire cooking favours bright acidity and clean textures over heavy sauces.
The Grade II listed coaching house dates its foundations to the twelfth century, originally serving stagecoach travellers and local farmers. A stone wall still divides the historic public bar from the main dining area. White tablecloths and polished glassware sit alongside exposed timber beams and deep leather seating. The British kitchen earned two AA Rosettes for culinary excellence after a complete overhaul in 2018, transforming the space into a refined yet unpretentious environment.
