The story
Palé Hall in Bala runs a seasonal kitchen where modern British cooking meets the quiet discipline of the Dee Valley. Dee Valley hogget appears alongside black garlic and asparagus, while fallow deer arrives with celeriac and quince to balance earth and sweetness. Chalk stream trout gets sharpened with lime, and halibut rests on potato with smoked pike roe.
