The story
The Schelly brings casual fine dining to Ambleside with a focus on Cumbrian cuisine that respects local ingredients. Chef owner Ryan Blackburn designed the space directly above the Old Stamp House to seat thirty guests. The venue takes its name from a rare freshwater fish found only in Brothers Water, Haweswater, Red Tarn and Ullswater. Every plate relies on produce that arrives fresh from surrounding farms and waters.
The menu offers relaxed versions of Ryan’s earlier creations alongside dishes shaped by his travels. Guests seated at the large table near the pass watch chefs prepare food as it comes off the line. Simpler plating choices highlight the quality of seasonal vegetables, meats and seafood without unnecessary garnish. This approach keeps the focus firmly on flavour and technique rather than formal presentation, a hallmark of their regional cuisine.
A compact room maintains an easygoing pace while supporting an extensive wine list sourced from small-scale growers across the UK and Europe. Ryan’s sommelier team curates selections available by the glass or bottle to match each dish. The straightforward layout encourages conversation without sacrificing standards, a balance reflected in the restaurant’s AA Two Rosette recognition for Cumbrian cuisine.
