Her training at Blue Hill at Stone Barns and New York’s International Culinary Center established a method that treats ingredients as narratives rather than mere components. She now guides the kitchen through ongoing research and seasonal reinterpretation. Indigenous vegetables and forgotten crop varieties return to her menus after being sourced directly from regional communities.
A seven course tasting menu defines modern Thai cooking by moving through carefully sequenced plates that trace geographic routes across the country. The noodle dish Dong Dang adapts a traditional Udon Thani technique, appearing with black squid ink or ricotta miso depending on the season. Another centerpiece gathers four distinct crab species into a single presentation, pairing Blue Swimmer Crab with Black Crab Miso and a garum made from last season’s catch. Every preparation highlights coastal and inland harvests.
The dining room occupies a residence held by the Debhakam family for three generations before its conversion into an urban food space. Classic architectural elements remain visible alongside a central garden that supplies herbs and edible plants year round. Guests sit beneath high ceilings while staff present each course directly at the table. This dedication to Thai culinary traditions and local sourcing recently earned the venue a Black Pearl one diamond distinction for 2026.
