The story
Smoke BBQ delivers authentic Texas barbecue in central Moscow under brand chef Alexey Kanevsky. A second generation cook with over fifteen years of experience, he studied traditional smoking techniques in the United States before joining the Dreamteam collective in two thousand seventeen. His background spans French patisserie and European dining, which now informs his methodical approach to slow roasted meats. The venue occupies nine hundred square metres of floor space, allowing the team to maintain consistent heat control across multiple pits.
The menu centres on extended smoking cycles that break down tough connective tissue into tender layers. Guests frequently order the signature brisket, which arrives alongside house baked bread and tangy pickles. Other staples follow established American barbecue protocols, including spare ribs cooked until they pull cleanly from the bone and chicken lollipops finished over direct flame. Breakfast service shifts the focus to hearth baked goods, featuring a notable brisket pie that repurposes leftover smoked beef into a savoury pastry.
The interior balances a countryside sensibility with urban convenience, creating a relaxed environment for larger groups. Heavy wooden tables and open sightlines to the smoking stations keep the atmosphere grounded rather than formal. This straightforward execution earned the venue a single ladle rating from the Schlemmer Atlas guide this year. Critics noted the generous portion sizes and the reliable adherence to live fire cooking traditions without unnecessary garnishes.
