The story
At Vivendum in Roermond, the kitchen focuses on seasonal gastronomy built around a straightforward principle: think global and eat local. Chef Alex Clevers maintains long standing relationships with regional producers, many of whom have supplied the kitchen daily for more than twenty five years. This steady supply chain anchors a rigorous approach that eliminates waste while keeping flavors sharp. A 16 out of 20 score from Gault&Millau confirms how reliably he turns those farm gate conversations into refined plates.
The menu adjusts constantly to match what the surrounding Maas valley provides. Tuna belly arrives raw with cucumber, yuzu, and dashi butter, while langoustine ravioli carries notes of carrot and kaffir lime. Autumn tables often feature venison loin roasted with pumpkin and black trumpet mushrooms, followed by intricate chocolate desserts crafted by pastry chef Jason. These examples show how seasonal cooking respects ingredient boundaries rather than masking them with heavy sauces.
The building began life in 1736 as a chaplain’s house before adapting to modern hospitality standards. Five guest rooms, including a duplex loft, sit above the dining floor and retain original proportions alongside contemporary furnishings. Warm weather draws guests toward the garden terrace, a space widely recognized as the most beautiful outdoor seating area in Belgium. The shaded courtyard frames every course in quiet light, while the original stone walls and wooden beams ground the experience in place.
