The menu highlights specific regional catches rather than generic selections. High-grade S-rank honmaguro forms the foundation of the nigiri selection, with attention paid to the distinct fat distribution across the chu-toro cuts. Daily arrivals often include wild sea bream sashimi, grilled Hokkaido scallops, and fresh squid prepared simply to let the ocean flavor dominate. A dedicated wine list features the 639 ROKU SAN-Q label, originally crafted in 2005 by winemaker Hideki Asano to complement Asian cooking styles. A reserved Gold trocken offers selected ripe grapes, while an Orange spätlese incorporates botrytis-affected fruit for richer pairings like eel.
