The story
Horita in Nagoya presents a rigorous interpretation of Japanese kaiseki cuisine, grounded in decades of diplomatic service and seasonal precision.
Chef Horita brings an extensive career to the kitchen, having served as head chef for Japanese consulates across China, Italy, and Korea. His experience includes presiding over state banquets during G7 and G15 summits while leading the culinary team at a presidential residence. These roles inform a cooking style that values technical discipline and cultural accuracy in every preparation.
The menu transforms monthly, aligning each dining cycle with a specific thematic tribute to the passing season. Ingredients sourced from mountains, rivers, lakes, and seas receive careful arrangement within tableware selected for their seasonal resonance. This approach reflects the core kaiseki pursuit of balance among heaven, earth, and humans, turning every meal into a structured homage to nature.
The restaurant traces its origins to 2007, when it became the first venue to offer authentic kaiseki cuisine in Shanghai. Over subsequent years, this foundation supported a reputation built on consistency and aesthetic refinement, resulting in five consecutive Black Pearl One Diamond awards. The accolade underscores a dedication to preserving Japanese culinary heritage through meticulous ingredient selection and disciplined execution.
